5 Day Patisserie Masterclass with Yolande Stanley and Will Torrent

A series of five focused masterclasses - a two day chocolates course, plated desserts day, entremet and petits fours & sugarwork days - to build your skill levels and leave you confident to produce beautifully presented set piece desserts or gateaux. We are delighted to have two of the most skilled patisserie tutors in the UK to teach these masterclasses, Yolande Stanley and Will Torrent. 

The first 3 days are taught by renowned pastry chef and chocolatier Will Torrent, author of 3 hugely successful books.  Will has a first class degree in Culinary Arts Management from the University of West London.  His training included stages with William Curley, Brian Turner and Gary Rhodes and at The Dorchester, Claridges, The Lanesborough and The Fat Duck.  He has won a host of awards including the Academy of Culinary Arts Award of Excellence, the Medallion of Excellence for a British Pastry Chef at the prestigious WorldSkills competition in Japan, the Craft Guild of Chefs Young Chef of the Year and the Acorn Scholar award.  He is still closely involved with the WorldSkills team and received  the WorldSkills UK Outstanding Achievement Award in 2012.  Will is an international Ambassador for Barry Callebaut and a consultant pastry chef to Waitrose.  He regularly appears on television including Jamie and Jimmy’s Food Fight Club, Sunday Brunch and This morning and he writes for The Times, The Guardian, Metro, Hello and The Daily Express.

Our entremet and petits fours & sugarwork days are taught by Yolande Stanley, one of only 7 people in the UK to have acheived the prestigious Master of the Culinary Arts for Pastry (other holders include Claire Clark and Benoit Blin).  Her career included  numerous head pastry positions at renowned 5 star hotels in UK and Switzerland. For several years now she has  been a University Lecturer and is currently at London South Bank University, teaching Patisserie and Chocolate - she is also an Ambassador for Cacao Barry.    

Yolande has been very active with WorldSkills for the past 15 years as a trainer and most recently as Competition Manager; she is just back from Abu Dhabi where she successfully coordinated 28 countries to compete and show off their Patisserie and Confectionery skills.

All days include lunch with with wine. This course runs from Monday 20 November to Friday 24 November 2017 inclusive.

NB This course may include jellies and mousses using gelatine so please call us before booking if you have dietary requirements which exclude gelatine.
