We will guide you through the tricky topic of the sustainability of fish, show you what to look for when buying it, how to prepare it and then how to cook with it. You'll come away armed with lots of recipes for different fish (as well as how to cook perfect shellfish at home) and the skills to recreate them. Previous classes have included Baked Sea Bass, Ceviche, an Oriental Marinade for Salmon, Beurre Noisette and Capers, Mackerel Escabeche, Mouclade (mussels in white wine) and Spanish Grilled Squid. Includes lunch with wine.
