Mirror Glaze Cakes: Entremet Masterclass with Yolande Stanley MCA

Mirror glazes are the latest trend in the baking world and most fashionable used on individual dome cakes.  In this hands on class you will create your own, beautifully flavoured, visually stunning mirror glaze dome cake and learn some classic patisserie skills along the way.   From a biscuit base to a double mousse dome shaped insert to the mirror glaze itself together with ideas for decorations to finish your cake beautifully, there will be plenty of techniques to practise under the expert eye of Yolande Stanley MCA.  Yolande will give you plenty of hints and tips on how to use your new found skills to create other items of entremet.  Please note: mirror glazes use both gelatine and chocolate.

Yolande Stanley is one of the most skilled patisserie tutors in the UK.  She is one of only 7 people in the UK to have acheived the prestigious Master of the Culinary Arts for Pastry (other holders include Claire Clark and Benoit Blin).  Her career included numerous head pastry positions at renowned 5 star hotels in UK and Switzerland. For several years now she has  been a University Lecturer and is currently at London South Bank University, teaching Patisserie and Chocolate - she is also an Ambassador for Cacao Barry.    

Yolande has been very active with WorldSkills for the past 15 years as a trainer and most recently as Competition Manager; she is just back from Abu Dhabi where she successfully coordinated 28 countries to compete and show off their Patisserie and Confectionery skills.
