The fourth in a series of five focused master classes that can be taken individually or together to build your skill levels and which will leave you confident to produce beautifully presented set piece desserts or gateaux.
Will Torrent will help you to create a beautiful plated dessert using a range of techniques on one plate. Every class is different. In previous classes students have made a chocolate, cherry and kirsch delice with chocolate and cherry ripple ice cream, cacao nib tuile, crystallised chocolate and spiced cherry compote. The delice included a jelly, a mousse, a sponge, a feulletine base and a glaze. Once you have made the accompaniments, you will learn how to plate up your creation beautifully.
