We are delighted to be welcoming Lucie Bennett back to The Bertinet Kitchen this September for her Autumn Entremets class.
Entremets are a layered dessert. Each layer is comprised of a different sweet treat, ranging from mousse, sponge, fruit compote, jelly, crème mousseline, biscuit, feuilletine, bavarois all often covered in a glaze. It can be as many layers, in as many colours, with as many tastes as you can imagine. The result should be a stunning, delightful treat full of complimentary flavours and textures. There are endless possibilities to delight when it comes to entremets – join us to learn the essential skills to get started.
This class is an exploration into autumn entremets, a beautifully composed seasonal dessert inspired by the very best autumnal flavours covering a host of different, valuable patisserie and chocolate skills. We will be making a caramelized white chocolate mousse which creates such a beautiful aroma when cooking, and using it in recipes is a game changer. You will then make an apple compote and an almond sponge base. Your entremets will be coated in a caramelized white chocolate glaze, decorated with apple crisps, white chocolate work and spiced streusel crumble. Skills covered will include, chocolate work, tempering and how to make chocolate decorations, how to make and use a soaking syrup, mousse and sponge work, glazing, assembling and decorating.
Full of skills, delightful treats, and expertise, this class is sure to be a wonderful introduction or advanced session for anybody interested in discovering more about the colourful, stunning world of entremets.
After starting her career as a Pâtissier in 2004 at Westminster Kingsway College on a two-year pâtissierie scholarship, Lucie moved to London and joined one of the UK’s leading chocolatiers, William and Suzue Curley. It was there that she refined her skills as a Pâtissier and Chocolatier while also gaining her first experience giving workshops. Lucie left London after four and a half years, taking her knowledge all over the UK, as well as to Greece, China and Saudi Arabia. She has many exciting projects such as teaching baking and chocolate classes, recipe developing with Bailey’s, being featured in Country Living magazine, and working as a brand ambassador for Guittard Chocolate in the UK. Currently, she works from her family home creating bespoke celebration cakes, wedding cakes, afternoon teas and pâtisseries. Lucie has an abundance of experience and skill; a day’s teaching from her promises to be full of wisdom, advice, and fun.
