In this hands on class, learn how to make your own layer cake showstopper with baking & buttercream expert, Marianne Stewart. You will spend the day learning professional cake skills, such as layering, masking, buttercream piping and creating on-trend ganache drips.
So that you can focus on your decorating skills, you will be given pre-baked sponges although Marianne will give you a full demo of how to make her signature whisked chocolate sponge cake – super moist and flavourful! You will make your own sumptuous Swiss meringue buttercream before using it to fill and mask your sponge. Marianne will show you how to work with the right tools to achieve beautiful straight sides, a flat top and crisp corners on your cake. You will be given a full demo of how to make drip ganache, before applying your own drips to your cake. You will then finish your cake with piped buttercream peaks, before embellishing with edible organic flowers and bright, sparkly botanical lollipops.
You will take home your own 6″ layer cake, boxed up, plus all the recipes used in the class.
Marianne Stewart is a qualified pastry chef who trained at Jamie Oliver’s Fifteen and worked for Peggy Porschen’s Cakes. Based in Bristol she now teaches baking and decorating classes as well as working as a food stylist, recipe developer and writer. She is the author of Nourish Cakes, Baking with a Healthy Twist, published in Spring 2018.
