We are delighted to be welcoming award winning, Bake Off The Professionals winner Helen Vass to The Bertinet Kitchen for this Chocolate Entremets masterclass.
Entremets are a layered dessert. Each layer is comprised of a different sweet treat, ranging from mousse, sponge, fruit compote, jelly, crème mousseline, biscuit, feuilletine and a bavarois all often covered in a beautiful glaze. It can be as many layers, in as many colours, with as many tastes as you can imagine. The result will be a stunning, delightful treat, full of complimentary flavours and textures. There will also be some chocolate skills in this masterclass, learning all about tempering and decoration techniques.
In this Chocolate Entremets masterclass you will be making individual petit gateaux and work together to make larger entremets. The flavour of the entremets will be chocolate and raspberry and this will have different elements and textures to make a stunning centrepiece. You will learn the art of glazing your entremets as well as learning the basics of tempering chocolate and making some chocolate decorations to decorate your entremets with. You will be making a chocolate mousse, a sponge with a feuilletine crunch, a raspberry cremeaux and a raspberry coulis. This class is full of different skills which you can apply across many different desserts and chocolate making. Some elements of this class will be prepared in advance due to the nature of freezing/setting of the entremets in a short period of time. Full recipes and instructions will be given. This is a hands on class where you will work together and individually to create delicious desserts.
Helen Vass first came to our TV screens as part of the winning team on Bake Off: The Professionals, turning ordinary patisserie and desserts into masterpieces. Her awards continued to come with the CIS Excellence Patisserie Chef of the Year Award and a Les Dames d’Escoffier Legacy Award. She is currently a Pastry Chef lecturer in Scotland and we are very honoured that she is coming to our Kitchen to share her skills. Her expertise, knowledge and talent will ensure that a day’s teaching from her promises to be full of wisdom, advice, and fun.
