Lucie started her training as a patissier and choclatier in 2004 at Westminster Kingsway College, where she studied a two-year pâtisserie scholarship. She went on to perfect her skills and continue her training at one of the UK’s leading choclatiers, William & Suzue Curley before striking out on her own where she has spent the last 9 years working all over the UK, in Greece, China and most recently Saudi Arabia; recipe developing with Bailey’s, teaching baking and chocolate classes, working on styled shoots and featuring in Country Living magazine as well as winning the baking category of The Young British Foodie Awards in 2015.
Lucie will teach you two different techniques of how to create beautiful handmade chocolates. Throughout the day she will give you lots of useful tips on working with this indulgent ingredient.
You will be taught how to create a flavoured chocolate ganache, and get lots of inspiration for flavour pairings when you recreate the truffles at home. You will be taught how to pipe your ganache, coat and decorate, creating gorgeous hand dipped chocolates.
You will also be taught how to temper chocolate using the seeding method and how to create casted chocolate shells using a chocolate mould. The chocolates will be filled with a wonderful liquid caramel or ganache, before sealing the base of the chocolate, encasing the delicious filling.
