Christmas is full of wonderful food treats that are extra special if home made. In this hands on class, Richard will cook and bake with you some of his favourite festive extras, many of which he uses year round on his classes but which at Christmas are elevated with his seasonal twist. Richard will also show you how some of these can be made well in advance of the big day to take the pressure off. They also make the perfect offering to take to dinner parties as gifts for your host or given as presents.
We will be providing jars for you to fill starting with Richard’s prunes in rum. Anyone who has been on a class with us knows that this is the perfect warming hit to have with a coffee on a chilly winter morning. You will make some pickled pears that are ideal paired with cheese or any left over turkey or ham. Christmas morning is not forgotten as we make some clementine and cognac marmalade to spread on your toast. You will take away a bottle of our cider punch that is sure to get any party off to a swing as well as being a delicious way to boil your Christmas ham, infused with star anise, cinnamon and cloves.
A jar of salted caramel will be next, a versatile store cupboard essential that can be an emergency pudding drizzled over ice cream for those unexpected Christmas visitors. Those visitors can also enjoy some Provençal nuts roasted in honey, lavender and rosemary. Add to this some sourdough crackers, 2 different varieties, a seaweed version and a beetroot and cumin version that are perfect with cheese and you have an impromptu party waiting in your larder.
Finally, no Richard Bertinet Christmas class would be complete without some mince pies, you will be baking a dozen to take away with you along with some Italian biscuits made with ground almonds. This is a variation on amaretti but these can be filled with various flavours of crème pâtissière or kept simple with an apricot glaze.
This is a hands on class and includes lunch with wine. You will take away your precious jars and boxes in a Bertinet Bag. The class will finish at approximately 3.30/4pm. Finish times can vary on each class, but this is a good guide.
