Taught exclusively by Richard Bertinet our one day English Baking class is suitable for those who would like to develop their baking skills, focussing on traditional classics and Richard’s take on his favourite British specialities.
Before the rise of the white sliced loaf, England was a country of craft bakers producing national and regional speciality products by hand. Learn how to make some of these classics starting with a cottage loaf, the distinctive shape coming from moulding 2 balls of English dough, placed one on top of the other. It makes for a very impressive and not often seen loaf to grace any table.
The Bath Bun is our regional speciality. This versatile dough can be traced back to the 18th century in various forms and is a constant staple in many of our delightful cafés in Bath. Today you will be making Richard’s version, made with a sweet dough and topped with sugar crystals.
Scones can be tricky to master but Richard has developed a fail proof recipe with an unusual twist, his French secret for this English classic. You will be making both sweet and cheese scones and developing your skills for onwards success.
No English Baking class would be complete without making some crumpets. Sweetened with honey, the batter is griddled to encourage the characteristic burst bubbles on the surface, served warm, they are hard to beat.
Finally you will be mastering a fruited tea loaf. Traditional ‘tea bread’ can sometimes be overly rich and heavy, but this one is fantastically light, perfect toasted with jam.
There will be plenty of hands on time to practice what you are learning during the day and you will return home with your bakes to share with family and friends.
At the end of the baking you will all sit down to enjoy a late lunch with a well-deserved glass of wine and a chance to ask Richard any questions.
The class starts at 10am and will finish around 3.30-4pm. Please bring a bag with you so that you can take home some of your delicious creations.
