We are delighted to be welcoming Lucie Bennett back to The Bertinet Kitchen for her 2 tier Italian meringue buttercream cake class.
The cake will be a delicate Earl Grey sponge, lightly soaked with Earl Grey syrup, layered with lemon curd and coated with the all important vanilla Italian meringue.
During this class you will make a delicious lemon curd filling, an Earl Grey syrup and create a wonderful light Italian meringue buttercream. Then you will learn how to layer and coat the cake with the meringue buttercream, with expert tips on how to give a professional finishing look to your cake. You will also be taught how to temper white chocolate, so you can make some beautiful, delicate chocolate decorations to adorn your masterpiece with. You will fill, stack, and coat your cake before adding the all-important decoration.
The class is perfect for those of you who want to improve and elevate your cake making and finishing techniques.
To allow you time to concentrate on learning the technical elements of this recipe, we will pre-prepare the Earl Grey sponge for you. Lucie will demonstrate how to make the sponge at the start of the class and guide you through the steps of how to re-create this delicious recipe at home.
After starting her career as a Pâtissier in 2004 at Westminster Kingsway College on a two-year pâtissierie scholarship, Lucie moved to London and joined one of the UK’s leading chocolatiers, William and Suzue Curley. It was there that she refined her skills as a Pâtissier and Chocolatier while also gaining her first experience giving workshops. Lucie left London after four and a half years, taking her knowledge all over the UK, as well as to Greece, China and Saudi Arabia. She has many exciting projects such as teaching baking and chocolate classes, recipe developing with Bailey’s, being featured in Country Living magazine, and working as a brand ambassador for Guittard Chocolate in the UK. Currently, she works from her family home creating bespoke celebration cakes, wedding cakes, afternoon teas and pâtisseries. Lucie has an abundance of experience and skill; a day’s teaching from her promises to be full of wisdom, advice, and fun.
