After his previous sellout classes with us, we are delighted to welcome MasterChef winner Tim Anderson back to the kitchen for this Japanese cooking class based on his fabulous new book Hokkaido: Recipes from the Seas, Fields and Farmlands of Northern Japan, which will be published on 24th October 2024.
Hokkaido is the northernmost island of Japan, known for its outstanding produce and for combining three foodways – European agricultural models, traditional and modern Japanese cuisine and indigenous Ainu gastronomy – to create a food culture distinct from the rest of Japan.
Hokkaido is a food journey, which incorporates tantalising recipes with incredible fresh produce. You will be making nori wrapped salmon belly, sweetcorn tempura fritters, Japanese barbecued lamb (or Ghengis Kahn as Tim calls it) and scallop and onion yakisoba. You will also be tucking into some melon cream puffs which is one of Tim’s favourite recipes from the book, a double forage cheesecake and a laminated milk bread.
Full of delights, Hokkaido is a celebration of one of the most exciting food regions in the world and this class will give you the perfect introduction to this delicious cuisine.
Tim Anderson was MasterChef champion in 2011 and has since achieved his dream of opening a Japanese restaurant, the acclaimed Nanban, in Brixton. He regularly appears on Jamie Oliver’s FoodTube and on BBC Radio 4’s Kitchen Cabinet.

The class will finish at approximately 3.30/4pm. Finish times can vary on each class, but this is a good guide.
