We are delighted to welcome Bath’s only Michelin starred chef for this fantastic hands on Michelin starred masterclass. Chris Cleghorn, the head chef of the Olive Tree restaurant at The Queensberry hotel, worked at some of the UK’s finest Michelin starred restaurant including the 2 star Gidleigh Park as Senior Sous chef alongside Michael Caines and a stint at the 3 star Fat Duck. He achieved a Michelin star in his own right in the 2019 guide and has retained that for 2020. Michelin have described his work as “refined creative cooking using colours, flavours and textures to full effect”.
Chris took over the Head Chef role at the Olive Tree in 2013 and set about creating the restaurant he envisaged where he could introduce diners to classic flavours that have been elevated by modern techniques. Key to this was an informal and relaxed atmosphere where the kitchen brigade serve in the restaurant alongside the front of house team. This creates a greater sense of theatre for guests as well as enabling them to meet the kitchen team and get a greater knowledge and understanding of the dishes they are eating.
Chris will be teaching you how to recreate a classic winter menu, featuring a starter of mackerel , horseradish, apple, shallot and dill, a main course including venison, celeriac, sprouts, raisin and bitter chocolate and to finish a dessert of rhubarb, yoghurt, pistachio and sorrel.
