Le Réveillon De Noël (Christmas Eve) is a day of celebration in France culminating in a large and very important festive meal with family and friends in the evening. On this new class with Richard Bertinet, celebrate with him in true French style, preparing food that would grace many French tables on this special day and get a taste of how the French enjoy this meal to remember. This class will run slightly differently to our usual classes and start at 2pm, with the build up cooking continuing until you all sit down to enjoy the feast a few hours later. Of course, there will be lots of delicious tastings throughout the afternoon, before you later sit down for this special dinner.
You will start with a Richard Bertinet Christmas cocktail fizz with some accompanying canapés, buckwheat blinis with smoked salmon. The first course will be gambas à l’armoricaine followed by a truffle risotto. For the main you will be cooking beef fillet with a marrowbone crust before finally mastering a nougat glace, packed full of caramelised nuts and candied fruit. You will finish with Richard’s twist on an affogato with his rum soaked prunes. The wine will be carefully chosen to match the food. There will be plenty of skills to learn during the class and maybe you will take away some new traditions to add to your own celebrations.
