Nathan Outlaw is one of the UK’s best loved chefs and certainly one of our favourites at the Kitchen. This is a fantastic chance to spend a day cooking with a chef who has two Michelin stars but also knows how to make simple food sing. This class is based on his latest book Fish for Dinner in which Nathan gives his expert advice on what fish to cook and how to cook it at home. Nathan will be joined in the Kitchen by Richard Bertinet and together they will combine to make a truly exceptional day of cooking and baking.
Using only the freshest fish that Nathan will source before he arrives with us, the actual fish for this class will be a complete surprise depending on what his trusted fishermen have landed. He will prepare, cook and serve dishes using 3 different fish plus 1 crustacean with Nathan’s selection likely to be made from mackerel, bass, red mullet, turbot, lobster or crab.
His fishermen include Paul Ledder who fishes sustainably out of Newlyn from a small 4 meter boat using rod and line, targeting bass and fishes exclusively for Nathan. Calum Greenhalgh, a lobster & crab fisherman based in Cornwall, works alone from a small boat and his wife cooks and sells the catch in a small shop in Port Isaac. Calum made the important ethical decision to work a single handed slow boat to reduce his carbon footprint as well as working closely with local fishermen to promote the conservation of fish stocks. Nathan will also be bringing fish from Kernow Sashimi, a co-operative of local fishermen passionate about the way they catch, land and take care of the fish and the ocean.
This will be a masterclass on getting the most out of our sustainable, seasonal seafood. You will also learn how to create fabulous sauces, marinades, garnishes and accompaniments.
