Nieves Barragán Mohacho is one of the most respected chefs in the world. Incredibly talented and passionate, Nieves is chef and co owner of Sabor (meaning flavour in Spanish) which was first awarded a coveted Michelin star in 2018. There are only 3 Michelin starred Spanish restaurants in the UK, 2 of these are in London and both of those received their accolades whilst overseen by Nieves Barragán.
During this hands on class you will be enjoying dishes such as a salt cod Brandade or Bacalao, dried and salted cod that is a speciality of the Basque region in Spain. This is one of Nieves’s specialities and we are excited that she has chosen this as part of her menu on this fantastic class. There will also be wild mushroom rice with truffle on the menu, the perfect autumnal dish when there are so many mushroom varieties in season that will infuse the rice with a real depth of flavour. Nieves will also be making with you a whisky mascarpone cream with wild berries, vanilla and marjoram and an extra virgin olive oil dressing. Expect lost of Michelin starred tips and expert tuition in this fabulous class.
Raised in Bilbao in the Basque region of Spain, Nieves spent most of her childhood shadowing her mother in the kitchen at home, as she created the family’s meals. She still rates her mother as her biggest inspiration, someone who would achieve great flavours and filling foods from everyday ingredients using every cut of an animal.
The Michelin guide credits Nieves with having created something authentic and truly joyful with Sabor and her book of the same name showcases the food that Nieves likes to cook when she’s off duty; the food that she grew up eating and the food that she still makes for friends and family. The class starts at 10am with breakfast and will finish around 3.30 – 4pm. Includes lunch with wine.
