Join us for our Nordic Baking class taught exclusively by Richard Bertinet.
With a climate suited to a range of cereals but particularly rye, the Nordic region has a wealth of baking history and an extraordinary range of breads and baking traditions to discover. Richard will teach you the skills to make Saffron buns, divine sweet treats that are often reserved for special occasions in Sweden. Follow this with a Swedish rye and caraway bread, a slightly sweet loaf that compliments savoury fillings perfectly. You will also make some sourdough knäckebröd crackers as well as some prune and cardamon fritters, both essential Nordic bakes.
As we move towards Spring, in Scandinavia thoughts turn to the return of the sun. To celebrate this you will be making solskinnsboller or solboller, directly translated as sunshine buns. Made with an enriched dough and filled with crème pâtissière these mouth watering delicacies are made to welcome the changing seasons.
Finally no Nordic class would be complete without using cinnamon and today you will be making some kanelbullar, Swedish rolls filled with a perfectly buttery cinnamon paste and covered with a sugar icing.
There will be plenty of hands on time to practice what you are learning while you absorb the hygge vibe.
At the end of the baking you will all sit down to enjoy a late lunch with wine and a chance to ask Richard any questions.
The day starts at 10am and will finish around 3.30 to 4pm. Please bring a bag or a large container with you so that you can take home some of your delicious creations.
