Our hugely popular Pasta Making Masterclass with Valentina Harris returns for a seasonal autumnal special.
Valentina’s pasta class will begin with learning how to make the basic dough for the pasta shapes you’ll be creating. Once you’ve made your dough by hand, following Valentina’s method, you’ll then move on to making all the sauces and the fillings for the individual dishes. When your sauces are ready, it’s back to the dough which will have had time to rest so that the gluten has relaxed, and then you’ll roll, cut and shape your pasta, ready to cook and pair with your sauces.
On this autumnal class, you’ll start by making Garanfelli, which are grooved pasta tubes, with a white ragu. Then you’ll master making stuffed pasta, with a ricotta filled ravioli. Next will be Neapolitan style maltagliati. This is a rustic and flavourful pasta dish that originates from the vibrant city of Naples in southern Italy. The name ‘maltagliati’ translates to ‘badly cut’ in Italian, referring to the irregularly shaped pasta pieces that are a hallmark of this dish. Next it’s onto Pasta e Fagioli (pasta & beans). It may sound unusual to have pasta and beans together, but not in Italy! This Italian stew makes a hearty meal in a bowl, perfect for those Autumn evenings. Finally, you’ll move onto tagliatelle with a creamy prawn sauce, another delicious supper to add to your repertoire.
You will emerge from this class armed with knowledge, skill and plenty of tips for cooking, making and serving this quintessential Italian speciality.
Valentina is our regular Italian tutor and has taught at the Kitchen for many years. She is a noted and much loved authority on Italian cooking and author of over 20 books on Italian cookery including Pasta Galore and Italian Regional Cooking.
The class starts at 10am and will finish around 3.30pm. Includes lunch with wine.
