Taught exclusively by Richard Bertinet, our pastry classes are a must whether you are baking for your family dinner, entertaining friends or want to learn how to make and decorate fruit tarts just like those that makes the display in French bakeries look so stunning.
On this Pastry Masterclass Richard will show you how to make sweet and salted pastry, by hand and in a mixer, with tins and without, how to rest and roll and how you blind bake your pastry. Having mastered the pastry itself, you will also make the fillings for your tarts, master a crème patissière, learn how to finely slice fruit to decorate your tarts, make a quiche Lorraine and a very quick tarte aux pommes.
With Richard you will also make some biscuits. Pastry can be easily adapted to make a range of delicious biscuits which allegedly keep perfectly for a week or 2! There are no rules and they can be made in all kinds of flavours and shapes, Richard will share some of his favourites with you.
The day starts at 10am with breakfast and will finish around 3.30 to 4pm. Includes lunch with wine. Please bring a bag and a large biscuit tin or container with you so that you can take home some of your delicious creations.
