We are excited to welcome Dhruv Baker back to our Kitchen. After winning MasterChef in 2010, Dhruv’s food journey has gone from strength to strength, firstly working in some of the UK’s finest restaurants including Le Gavroche, The Kitchen and Helene Darroze at the Connaught. He went on to open his gastro pub The Jolly Gardeners before turning his lifelong love of charcuterie into a successful business. He is constantly in demand for his expertise in recipe creation, premium ingredient sourcing and wine pairings.
Born in Mexico to an Indian mother and English father, Dhruv brings his distinct understanding of spice and layering of flavours to his cooking. On this course, Dhruv will impart his extensive knowledge of exquisite, delicate flavours and responsibly sourced ingredients. You’ll start by preparing burrata, loin and pesto crostini, some smoked coppa panzanella and remoulade with salami. You will then learn how to delicately spice crab to enjoy on sourdough with a guanciale crisp. With Dhruv you will make a classic carbonara (he reckons we all need to know ‘proper’ carbonara!), followed by cod, chorizo and Isle of Wight tomatoes with panko gremolata. Finish with a rhubarb and frangipane tart and crème anglaise. This class is truly one not to be missed.
The class will start at 10am and finish around 3.30 / 4pm and includes lunch with wine. Please bring a container to take home some of your delicious food.
