We are delighted to be welcoming Lucie Bennett back to The Bertinet Kitchen this August for her Swiss Meringue Buttercream Cake Class.
This class will cover the making of your very own layered celebration cake. You will learn how to make a wonderful vanilla Victoria sponge cake and a flavoured soaking syrup which will be used to lightly soak the sponge. You will also be making a delicious seasonal fruit compote filling of either blueberry, blackberry, or raspberry. One of the most important skills covered is how to make a glorious silky smooth Swiss meringue buttercream which is lovely and light and perfect combination with the other elements.
During the afternoon, you will fill, stack, and coat your cake before adding the all-important decoration. Piping techniques and different decoration styles will be covered, with tips of how to use fruits and edible flowers to create a sensational seasonal celebration cake. Lucie will also demonstrate how to make delicate white chocolate decorations, which can be used to elevate the look of the final piece. The class is perfect for those of you who want to improve and elevate your cake making and finishing techniques.

After starting her career as a Pâtissier in 2004 at Westminster Kingsway College on a two-year pâtissierie scholarship, Lucie moved to London and joined one of the UK’s leading chocolatiers, William and Suzue Curley. It was there that she refined her skills as a Pâtissier and Chocolatier while also gaining her first experience giving workshops. Lucie left London after four and a half years, taking her knowledge all over the UK, as well as to Greece, China and Saudi Arabia. She has many exciting projects such as teaching baking and chocolate classes, recipe developing with Bailey’s, being featured in Country Living magazine, and working as a brand ambassador for Guittard Chocolate in the UK. Currently, she works from her family home creating bespoke celebration cakes, wedding cakes, afternoon teas and pâtisseries. Lucie has an abundance of experience and skill; a day’s teaching from her promises to be full of wisdom, advice, and fun.
