We are delighted to welcome Maunika back to the Kitchen for this exceptional class on Thalis. Chef and food writer Maunika Gowardhan has amassed a global following of home cooks who have fallen in love with her cooking style and traditional Indian recipes that are accessible and achievable. Born and raised in Mumbai, Maunika is now based in the UK and is passionate about bringing the rich history of Indian cooking to your Kitchen.
Thali literally translates as ‘a large plate’ and has come to mean a complete meal on a platter made up of a variety of components including curries, stir-fires and vegetable dishes, chapatis, chutney and raita all served in little steel bowls known as dumas. The thali offers a marriage of all the flavours of India, hot, sour, spicy, crispy, tangy and sweet, there really is no better way to explore this extraordinary cuisine. They also rely heavily on the nutritional values of the dishes balancing this with the flavours. Often used for celebrations they are the perfect way to understand the cuisine of India.
Together with Maunika you will be cooking thali from her wonderful book starting with anardana murgh, a pomegranate, chilli and garlic chicken stir fry. This will be served together with andhra tomato paapu, a spiced tomato dal cooked with turmeric and chilli, maharashtrian batatachi bhaaji, stir fried potatoes cooked with curry leaves, cumin and garlic and a Punjabi khatte chole, chickpea curry with ginger, green chillies and dried mango. You will also be making chapattis, Bengali tomato chutney and a boondi raita.
You will emerge from this class armed with knowledge, skill and plenty of tips for cooking, making and serving this wonderful cuisine in your own home.
The class will start at 10am and finish around 3.30 / 4pm and includes lunch with wine. Please bring a container to take home some of your delicious food.
